Did you ever wonder why you get teary-eyed when cutting onions? No, it's probably not in sympathy for the poor vegetables (unless you're very soft-hearted).Nope, the reason is sulphuric acid. Onions contain sulphuric compounds which are released into the air when cut. When these compounds hit the water in your eyes, they combine to form sulphuric acid. OUCH!


Funny thing, though, after those same attack onions are subdued by cooking, their natural sugars take over the flavor profile. YUM!
